Description:

The tasty and easy-to-make yoghurt marinated chicken is juicy and tender.

Ingredients:

  • 1 cup plain whole-milk yogurt
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red vinegar
  • 2 tablespoons tomato paste
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 garlic cloves flattened
  • 2 unpeeled lemons
  • 2 pounds skinless boneless chicken (cut into 1 1/4-inch cubes)

Method:

  1. Mix the yoghurt, garlic, chilli powder, cumin, onion, extra-virgin olive oil, kosher salt, and freshly grounded black pepper, to taste, in a medium mixing bowl. Stir in the chicken to evenly coat it. Refrigerate for at least 2 hours and up to overnight if covered.
  2. Heat the grill to high when ready to cook. Thread the chicken pieces onto the skewered and cook, rotating often, for 8-10 minutes, or until the chicken juices run clear.
  3. Serve immediately with a sprinkling of chopped parsley (optional).

Ingredients:

  • 1 medium-sized head of cauliflower
  • 2 tablespoons sesame oil
  • 1 large carrot, cubed
  • 2 garlic cloves, minced
  • 1 cup frozen edamame
  • 2 beaten eggs (use scrambled tofu for vegan)
  • 3 tablespoons low sodium soy sauce (use tamari for GF)
  • 6 green onions, minced

Method:

  1. Mash cauliflower using the largest side of a chipper OR pounding some clean edge pieces in a blender; the finished product should resemble smaller rice grains.
  2.  In a large frying pan, heat 1 tablespoon sesame oil over medium low heat. Stir in the carrots and garlic for about 5 minutes, or until aromatic. Add the cauliflower, beans, and remaining sesame oil to the pan and stir fried quickly to soften (but not mush) the cauliflower.
  3.  Make a well in the centre, lower the heat, and crack the eggs in. Gently stir the eggs until they are completely done. Just before serving, add the soy sauce and green onions
