
Description:
The tasty and easy-to-make yoghurt marinated chicken is juicy and tender.
Ingredients:
- 1 cup plain whole-milk yogurt
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red vinegar
- 2 tablespoons tomato paste
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 6 garlic cloves flattened
- 2 unpeeled lemons
- 2 pounds skinless boneless chicken (cut into 1 1/4-inch cubes)
Method:
- Mix the yoghurt, garlic, chilli powder, cumin, onion, extra-virgin olive oil, kosher salt, and freshly grounded black pepper, to taste, in a medium mixing bowl. Stir in the chicken to evenly coat it. Refrigerate for at least 2 hours and up to overnight if covered.
- Heat the grill to high when ready to cook. Thread the chicken pieces onto the skewered and cook, rotating often, for 8-10 minutes, or until the chicken juices run clear.
- Serve immediately with a sprinkling of chopped parsley (optional).
